FENNEL SPICED ITALIAN PATTIES……………………………………………

This is a delicious variation to traditional Italian sausages.  This recipe pairs very well with a fresh mixed green salad and some crusty hot garlic bread.

INGREDIENTS:

  • 1-lb. lean ground pork
  • 1/4 cup fine dry bread crumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tablespoons dry red wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon fennel seed

DIRECTIONS: Mix the pork, bread crumbs, egg, garlic, wine, salt, pepper and fennel seed.  Divide into 4 equal-sized portions and shape into 1/2 inch thick patties. Place on broiler rack about 4 inches from the heat and cook for abuot 6 minutes on each side.  Makes 4 servings.

PORK CHOPS WITH VEGETABLES………………………………………………

INGREDIENTS:

  • 4 lean pork loin or rib chops, about ½ inch thick
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried ground sage
  • 1 medium onion, thinly sliced
  • ½ cup chicken broth
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 2 ears corn, cut into 2-inch pieces
  • 2 medium zucchini, cut into 1-inch pieces
  • 2 tablespoons snipped parsley

DIRECTIONS: Trim fat from pork chops.  Rub pork on both sides with garlic powder and sage.  Cook pork in a 10-inch non-stick skillet over medium eat until brown on both sides.  Place onion on pork.  Mix chicken broth, salt and pepper; pour around pork.  Heat to boiling; reduce heat.  Cover and simmer 30 minutes.  Add corn and zucchini is crisp-tender, 10 to 15 minutes longer.  Sprinkle with parsely   From the Medford House “6 Herbs for Every Kitchen Cookbook” Excerpt from the Sage section
