This is a classic French chicken recipe that will delight your family and guests. It might look a little complicated at first but if you read the recipe you will find that it is very easy to accomplish and well worth the effort.

Recipe for Tarragon Chicken

SEASHORE CHICKEN

2 tablespoons all purpose flour
3/4 spoon fresh basil
3/4 teaspoon fresh tarragon
1/8 teaspoon fresh sage
1/4 teaspoon paprika
salt and white pepper to taste
4 checken breast halves, boned and skinned
1 tablespoon olive oil
1 tablespoon butter
2 small garlic cloves, minced
1/2 cup white wine
1 cup red grapes, halved and seeded
1/;2 cup chicken stock
1 teaspoon fresh lemon juice
1 tablespoon finely chopped fresh parsley

Mix flour, basil, tarragon, sage, paprika and salt and pepper in a large bowl. Add chicken and toss gently to coat. Heat oil with butter in heavy large skillet over medium-high heat. Stir in garlic. Add chicken and saute on both sides until golden brown. Pour in wine. Cover and cook just until checken is don3e, about 3 minutes. Add grapes, broth and lemon juices, and continue cooking sauce until reduced by half. Pour sauce over chicken. Top with parsley and serve.
